In the Footsteps of Noah
with Walter Deller

Walter DellerWe will spend our days exploring some of the different ways wine appears in the diverse collection of books that make up the scriptures. We will consider how it functioned in the economy of ancient Israel, and how it functions as a symbol in the sacrificial economy, in prophetic oracle, in legend, and as apocalyptic marker.

Following the injunction of the author of 1 Timothy, some part of our evenings will be given over to tasting regional wines, offering an introduction to different varietals (grape types), and considering the growing impact and argument in the wine world of high technology and standardized wine styles versus biodynamic approaches with a focus on tradition and terroir.

Participants will have a chance to play the Parker Game and try out their own skills as a wine reviewer, and to consider issues such as the impact of glass shape on the smell and taste of wines (the Riedel Factor).


WALTER DELLER is a biblical scholar and wine enthusiast. After completing a doctorate in Old Testament studies he worked for the Diocese of Toronto, first as Coordinator of the Logos Institute, then as Director of Program Resources. From 2001–2008 he was Principal of the College of Emmanuel and St Chad in the Saskatoon Theological Union. From 1982-2001 he served as assistant organist for the Parish of St Martin-in-the-Fields in Toronto, Ontario. He has travelled extensively in France, eating and drinking in most of that country’s major wine regions. An Opimian Society member since 1978, Walter is a fan of the Cabernet Francs, hangs out with Pinot Noirs all the time, and admires a crisp Sauvignon Blanc as much as a ripe, luscious botrytized Semillon, or a soft peachy Viognier. Born in Manitoba, Walter has lived at various times in Nova Scotia, Toronto and Saskatchewan, moving his wine cellar and collection of old wine labels with him.
